The Mini Blini Napoleons is a unique architectural take on blini and caviar by chef Bob Spiegel. It is an easy recipe that takes not more than 60 minutes to yield around 40 pieces of mini blini Napoleons.

Ingredients that you’ll need to prepare them includes 1/4th cup warm water, 1 ½ teaspoon active dry yeast, 1 ½ teaspoon sugar, 1 ½ cups milk, 1 large egg, 1 cup all-purpose flour, ¾ cup buckwheat flour, 1.2 teaspoon salt, 4 tablespoons unsalted butter and more for brushing, 1 ½ cups creme Fraiche, 1 bunch chives, finely chopped and finally 1 ½ ounce caviar.

The Mini Blini Napoleons is a unique architectural take on blini and caviar by chef Bob Spiegel. It is an easy recipe that takes not more than 60 minutes to yield around 40 pieces of mini blini Napoleons.

To prepare this dish, mix water, yeast and sugar in a bowl and let it sit for around 5 minutes. On the side, whisk 1 ½ cups of milk and the egg and add flour and salt to this mixture until it smooths. Finally, add butter and let it sit for 30 minutes. Then, set a 10-inch non-stick skillet over moderate heat and brush it with butter. Pour 1/3 cup of the batter and swirl to coat the pan. You need to cook this until you start seeing tiny bubbles on the surface and the bottom is browned. Now carefully, flip the blini and cook the other side as well. Once done, transfer it to a baking sheet and repeat the same process with the remaining batter.

Now, in a bowl, beat the creme Fraiche until it gets stiff. Spread a thin layer of blini on 8 or 9 blinis and stack them with a plain blini on top. Trim them from rounded edges and cut them into 1-inch square pieces. Dip the layered side into chives and place them on a platter. Last touch- dollop caviar on top. Tada! Your Mini Blini Napoleon is ready.
