Instead of adding sugar to the drink itself, you’ll add a sugar cube. When the champagne hits the sugar cube in the bottom of the glass, it creates an ongoing fountain of bubbles that leaves the glass literally sparkling for minutes! Want more bubbles? Just top off the glass with champagne, and you’ll have another round of bubbles to keep things lively.

INGREDIENTS

 • 1 sugar cube
• 5 dashes Angostura bitters
• Squeezed lemon peel
• 1 glass champagne (10 tablespoons)
• For the garnish: Lemon twist

HOW TO PREPARE?

1.Add a sugar cube to bottom of a champagne flute. Add 5 dashes of bitters to the sugar cube. Use a vegetable peeler to
peel off a small strip of lemon skin. Squeeze the lemon skin into the flute to release the oils.
2.Fill the glass with champagne and serve immediately: watch how the sugar cube makes the bubbles sparkle!

FOR GARNISHING

1.Cut the lemon width-wise into a circle.
2.Run a paring knife around the edge to remove the peel, cutting away as much of the pith as possible. Remove the fruit and set aside.
3.Cut the remaining peel circle so that it becomes a long strip. Twist it, holding it for several seconds until the shape is kept
and garnish it! You can serve this drink on the rocks in a cocktail glass. Follow the same instructions, just place the ice in the glass with the sugar cube, then top with champagne. The drink will have a more subtle flavour.
