With classic décor, calming ambient lighting, and global tunes playing in the background; Tres is back with its original vanguards; culinary maverick Julia Carmen Desa and Jatin Mallick in a brand new avatar, whilst maintaining the delicate balance of flavours. We stepped out on a breezy winter evening to take a sip of their cocktail menu and comfort food for the soul, which boasts of fresh seasonal ingredients, rich flavourful sauces, and a blend of conventional and modern cooking techniques, such as slow cooking, roasting, baking and grilling.

Recently, there’s been a palpable shift towards cocktails, since people are well-travelled and want to move beyond the tried and tested flavours. Herein, our pick at Tres was the Delhi 75 cocktail, which was their version of the classic French 75 sparkling cocktail, with home-made vanilla bean, rose syrup, lemon, gin and prosecco. It was indeed a refreshing and citrusy gin cocktail that packs quite a punch. Served in a cocktail glass, one half of the glass is coated with in-house dried rose petals to aid in with the aromatics. Sounds good, right?

This winter, Tres took us on a culinary journey, from the vibrant Spanish culture, to the breath-taking landscapes of New Zealand, through their passion for serving exceptional food. Some of the best foods to be paired with this cocktail are Tostone — Plantain Tostadas, Baked Artichoke Hearts, Josper Grilled Lamb Keftas, and the Morrel, Shitake and Cep Risotto. Every element of each of these dishes is completely handcrafted, right from the stock to the sauces. Freshly baked in-house breads, flavoured with curry leaves, the quintessential aromatic herb, paired with hot piping soup makes for a perfect winter indulgence.
