Marinated Lamb Chops with Tomatoes and Mushrooms
INGREDIENTS:
• 1 Rack of Lamb (8 to 9 single-rib lamb chops)
• 1/3 cup olive oil
• 4 garlic cloves, crushed
• Juice of 1 lemon
• 2 tbsp fresh oregano or 2 tsp dry oregano
• Salt (according to taste)
• Pepper (according to taste)
• Portabella mushrooms, thinly sliced
• Tomatoes, sliced
• Lemon slices and cilantro for garnish
HOW TO MAKE:
1. Clean and pat dry a Rack of Lamb and slice into individual chops, removing some of the fat. (Not cutting the fat might lead to burnt fat, which will ruin the taste of the meat).
2. Now, it’s time to make the star of this recipe, the marinade. Mix all of the marinade ingredients–olive oil, garlic, oregano, a dash of salt and pepper, and rub the marinate generously on all sides of the meat.
3. Keep the marinated chops in a deep dish for about an hour, or overnight.
4. Over high heat, place a stainless-steel pan, a hot cast iron, or a grill pan to pre-heat.
5. Once the pan/cooking top becomes hot, add 2 tablespoons of olive oil.
6. Carefully put the lamb chops on the hot pan. Time to sear. Let it cook for good 3-4 minutes per side.
7. Once you see the nice golden–brown marks, flip the sides.
8. Now, you can add the sliced mushrooms and cook until they are cooked according to your preference.
9. Add the tomatoes at the last minute along with the rest of the marinade mixture and give a slight mix.
10. Once everything is cooked nicely, take off the lamb chops on a plate to let them rest for 5 to 7 minutes.
11. Drizzle the leftover marinade, lemon slices, oregano and some cilantro for the garnish.
